Process: Honey
During honey processing the coffee fruit is pulped to remove the seed (bean) but is not washed, so the sticky mucilage from the fruit remains on the seed throughout the drying process. It takes a bit longer than the washed to dry and requires more movement to prevent over fermentation but gives it extra flavor and aroma.
